How to make salami & lunch
Salami is an extraordinary food with extraordinary flavour and is a superbly clever way to ‘preserve’ meat. It is quite fascinating really that salami is a fermented food in the way that kimchi, yogurt and cheese are. Meat is minced, mixed with salt, pepper, spices and delicious wine, then emulsified. The mince is packed tightly into skins to foster fermentation, followed by curing. The process is simple once you understand what to do and why you do it and the result is … divinely delicious.

This hands on workshop will culminate in a simple lunch of home made sausages, salad, simple vegetarian side dishes and tiramisu! at about 2pm. Grazing platter throughout the class, with hot drinks herbal or caffeine rich. And as I love singing Italian folk songs, there will also be a song or two for you.
We will be using meat from our own Large English Black Pigs which are raised on pasture, for the salami making class and our lunch sausages will be made from our meat too.
Bring extremely warm clothing, scarves, jacket, warm hat as we will be working al fresco! Lunch will be served inside our farmhouse in luscious fire crackling warmth.

NOTE: I am not allowed to let you take home salami, hence we will eat home made sausages instead using our pasture raised pork.
