How to make pastry & relax with a sit down dinner

Ayelet from Israel is our teacher! Woo hooo! This class is both hands on and a demonstration class.

Ayelet will demonstrate how to make a sweet pastry and a savoury pastry.

Then you will make one pastry each: some of you will make pastry for savoury tarts and others will make pastry for sweet tarts.

Working flour and butter between your fingers, rolling and then leaving your pastry to rest.

Prepare tart rings with butter, then it’s time to roll and line our rings. Rest the pastry once more.

Ayelet will demonstrate the next stage. She will make Gougères (French Cheese Puffs) and a chocolate filling for our sweet tarts.

Together we will prepare our savoury ingredients and blind bake our tarts.

Let’s fill the Gougères with Mornay sauce, remove our blind baked tarts and baking weights from the oven, fill each tart and back in the oven.

It’s salad making time and dressing flavours to choose from. And voilà, our feast is ready! Let’s sit and enjoy and chat chat chat!

Our cook

Ayelet Harpaz has worked for the Fat Duck and the French Laundry and was former head pastry chef at the Lake House in Daylesford. She is currently working as a chocolatier at Mork chocolate Melbourne. I am so excited to have her here at ORTO because if my digestive system permitted it, I would eat pastry every day! I can’t wait to eat what we make and I can’t wait to meet you. Much huge love, mara
