My Book The Baker’s Percentage

A book dedicated to home bakers because making bread at home is a divinely wonderful, delicious and super nutritious thing.The Baker’s Percentage explains a simple formula, used by bakers all over the world, to create bread recipes.The concept is simple, when making bread, consider that the weight of every ingredient added to make that bread, is a percentage of the total flour. For example, salt is always 2% of the flour total. Therefore if you are making a loaf of bread with 700g of flour, then the salt amount you would add to the recipe, would be 2% x 700g = 14g of salt.

Leaven is added usually as 20% of the flour total, therefore 700g x 20% = 140g leaven (starter). Plenty more details in the book about how the percentages are informed and how the type of flour you use affects the % of water added to your bread recipe, or how the temperature in your home impacts the leaven percentage (%) used.
