Rosie Laszlo is a brilliant cheese maker from Charleroi Belgium, who fell in love with goat cheese while living in France.
Using raw milk from goats she tends and cares for, Rosie makes Picodon cheese, a textured full flavoured cheese originally from the Rhone in Southern France. Each cheese is wrapped in chestnut leaves and tied with cotton to mature.
I have invited Rosie to share her cheesemaking skills at ORTO farm. I really like eating cheese. Cheese of all kinds. From very strong flavours to sweet or creamy. Like my mum we are great lovers of cheese.
I want to learn to make Rosie’s cheese as it is extremely delicious, complex in flavour and goodness.
We will use fresh goats milk from Rosie’s goats hand milked by her and be taken through the entire cheese making process.
Rosie will bring samples of her mature cheese for us to indulge in. I will make polenta with a vegetarian ragu and garden salad for a shared lunch. I invite you to also bring a small simple vegetarian offering to share, free of packaging.
We will discuss all things cheese, and then I will lead you for a walk around our property, to the wetland and through the kitchen garden, a pause by our heritage chickens and berry orchard and share with you the comfort and beauty that comes from building with straw.
Rosie is a highly skilled teacher, with a gentle calming pace that I find infectious.
