Tomato preserving every which way

Learn to preserve tomatoes using a range of preserving techniques to make the most of the harvest season.

Food preserving at home is easy once you understand the fundamental principles of preserving.

This class is not about teaching you a specific recipe. My aim is always to teach people the principles that underpin the process of preserving. This allows you to make the very most of the resources available to you.

Recipes confine you to using specific ingredients in specific quantities.

By learning the fundamentals: how time, temperature and pH play pivotal roles in food preserving, you will be able to forage and harvest to your hearts content!

What you will learn
• Learn when to harvest, what to buy and how to make the most of the tomatoes available to you.
• Learn how to bottle whole tomatoes, crushed tomatoes and tomato puree`.
• Learn how to completely dry tomatoes using the sun or a dehydrator
• Learn to semi dry tomatoes and preserve them in oil, herbs and vinegar.

Lunch
I will provide homemade flat breads and two vegetarian fillings for a shared lunch. Please bring your own home made vegetarian filling to share. Keep it simple.

What to bring
Two 700g empty reused passata bottles typically found in supermarkets with their lids.
Apron
Tea towel
Vegetarian package free lunch to share.

You will take home
Two full bottles of pureed tomatoes.
